Let me share my favorite homemade fried noodles recipe. China has all kinds of methods for cooking noodles. We have cooked cold noodles, longevity noodles, and today we will make fried noodles.

Fried noodles are a traditional snack popular in both northern and southern China. Whether in the bustling streets or in formal restaurants, you will find pan-fried noodles. People use a wide variety of ingredients to cook a wide variety of fried noodles recipes. Most Chinese family lunches are a meal of rice and some stir-fry, but, if you don’t want to cook rice and stir-fry at home, it’s a good choice to make fried noodles.

Ingredients for homemade fried noodles:
- 150g Alkaline noodles (Ramen)
- 2 eggs
- 2 ham sausage links
- 4 garlic cloves
- ¼ of a red onion
- bok choy leaves
- bean sprouts
Seasonings for homemade fried noodles:
- 1 spoon Laoganma Chili Oil with Black Bean Sauce
- 1 spoon Light Soy Sauce
- 1/2 spoon Dark Soy Sauce
- 1 spoon of oyster sauce (or 1/2 spoon of salt)
Servings:
Serves 2-3 people
Preparation:
- Slice the ham sausage. Mince the onion and garlic.

- Scramble the eggs.

Cooking:
- Add water to a saucepan and bring to a boil. Add the noodles and boil for 7 minutes, then soak the noodles in cold water until they are needed later.

- Pour the oil in the wok and heat it. Then, add the scrambled eggs to the hot oil, stir fry until firm, and remove the eggs from the wok. Set them aside for later.

- Add fresh oil to the wok and heat the oil. Then add the minced onion and garlic and stir fry to create a fragrant aroma. Next, add the Laoganma, ham sausage, bok choy, and bean sprouts. Stir-fry the greens and bean sprouts until softened.

- Strain the noodles. Then add the noodles and eggs. Add the light and dark soy sauces, and the oyster sauce. Stir-fry the noodles evenly.

- Remove the finished dish from the wok and place in a serving bowl. Sprinkle some sesame seeds (or scallions) to decorate and serve.

NOTES:
- There is no need to cook the noodles too well. This prevents the noodles from becoming shattered when they are fried.
- You can substitute any vegetables or meat you like to the fried noodles.

- 1 tbsp Oyster sauce

Notes

- You can substitute any vegetables or meat you like to the fried noodles.
- Guangxi Kou Rou, bacon, or diced ham make nice alternatives to ham sausage
- Spinach leaves are a delicious substitute for Chinese broccoli
- 2 packages of Ramen noodles are excellent in this dish. Discard the seasoning packets.
