Coca Cola Chicken Wings

When you see this title, I guess you will be puzzled. “What? Coke and chicken wings? Can Coke be cooked with chicken wings? I only know deep-fried chicken wings or grilled chicken wings!” Coke is a drink, chicken wings are meat, how do they fit together, and what kind of taste is that? We like to cook chicken in a caramel color. It is said that a chef in a Chinese restaurant accidentally knocked the coke and dropped it into the pot where the chicken was cooking. In China, cola chicken wings is a common snack. Even when people think of chicken wings, they think of cola chicken wings. Everyone has their own special method of making cola chicken wings, but regardless of the difference in the method, people always use cola. Coke makes chicken wings full of “Nice” flavor. Cooking Coca Cola chicken wings is very simple. So, if you like cola, and if you like chicken wings, then come cook this dish with me. 

Ingredients needed:

  • 1 pound (500 g) of chicken wings 
  • 1 12-ounce (330 ml) can of your favorite cola 
  • 2 scallions 
  • 3 slices of ginger 
  • 3 teaspoons (15 ml) of cooking wine  
  • 1 teaspoon (5 ml) of light soy sauce  
  • 2 teaspoons (10 ml) of dark soy sauce 
  • 1 star anise (optional) 

Preparation:

  1. Wash the chicken wings and cut 3 times with a knife on the front and back of each chicken wing.

  2. Add 2 teaspoons (10 ml) of cooking wine and 1 teaspoon (5 ml) of dark soy sauce to the chicken wings. Marinate for 30 minutes.

Cooking Coca Cola Chicken Wings:

  1. Add water to the pot, add the chicken wings into the pot, add ginger slices, and the white parts of the scallions. Blanch the chicken wings. Skim the foam from the surface of the boiling water.

  2. Wash the chicken wings with water. Add 2 teaspoons (10 ml) of oil to the wok, heat the oil and add the chicken wings. Use medium heat to fry the chicken wings on both sides until golden brown.

  3. Add the can of cola, 1 teaspoon (5 ml) cooking wine, 1 teaspoon (5 ml) dark soy sauce, 1 teaspoon (5 ml) light soy sauce, and 1 star anise. Stir-fry evenly until the broth boils, then use low heat to simmer the chicken wings.

  4. When you see that the cola broth has reduced to about one bowlful, taste the broth and add salt according to your taste. 
  5. When the the broth reduces to a sticky syrup, remove the chicken wings, garnish with sesame seeds, and serve.

Notes:

  • Because cola has a lot of sugar, please pay attention to the reduced volume of broth as the cola broth begins to thicken. You do not want to burn the sugars to your wok. 
  • The skin of the blanched chicken wings will be sticky. Add more oil if needed to keep the skin from sticking to your wok.
