Winter melon soup is a homemade soup based on winter melon. Winter melon soup is popular in Jiangnan and northern China. It is very simple to prepare, and is often cooked in family kitchens. Whether it is served with rice, noodles, or alone, it is delicious. People say that wax gourd has the effect of reducing weight and fat. Today, I will use corn and winter melon to cook a soup. This is a healthy, delicious vegetarian soup.
What Is Winter Melon?
Winter melon, or ash gourd, is a mild-tasting fruit. In the United States, it is grown in South Florida. The melons are sold primarily in Asian markets. Winter melon, is also commonly called ash gourd, wax gourd, white gourd, and winter gourd. It is a member of the gourd family, which includes cucumbers, melons, zucchini, pumpkins, and other squash.

Ingredients for Winter Melon and Corn Soup
- 2 pound (1 kg) Winter melon
- 1 ear of corn
- 1.5 teaspoon (8 ml) Salt
- 1 teaspoon (5 ml) Chicken Essence (granulated chicken bouilon)
- 1 teaspoon (5 ml) Oil
- Green onion for garnish
Cooking Winter Melon and Corn Soup
- Peel the wax gourd, remove the seeds and soft pulp holding the seeds, and cut into pieces with a thickness of .25 inch (5 mm). Cut the ear of corn into cross-section pieces.

- Add enough water to the wok to cover the corn, and bring to a boil. Add the corn to the boiling water, and cook for 2 minutes. (Add water according to the amount of ingredients. If you like to drink your soup, you can add more water.)

- Add the winter melon and pour the oil. Cook for 10 minutes, until the winter melon is soft. Then add the salt and chicken essence.

- Sprinkle some chopped green onions and finish.

Notes
- Please remove the skin, seeds, and soft part holding the seeds in the winter melon.
- Winter melon does not need to be cooked too soft.
- Add salt according to the amount of water you add.
