Jing is finishing her second year of culinary school at New Oriental Cooking School in Hefei. The school is holding a series of performances and competitions to showcase the students’ skills. Today we have a video (scroll down) for you showing her class demonstrating wok cooking techniques to a synchronized rhythm. Jing’s cooking class competition performance will get your toes tapping!

I am very proud of Jing. She is only the 6th woman to take this Chinese cuisine course at New Oriental Cooking School. The wok techniques shown here are physically demanding. Filled with food, a commercial-sized wok can weigh 10 pounds or more. To keep the food from burning, the chef must keep the food moving and tossing: the real meaning of “stir-fry”. The technique puts a lot of strain on the left wrist and forearm.

Jing has worked very hard to build strength in her wrists and arms and to master these techniques. You can learn more about her experiences by reading her learning journal.
