Ground bean sauce looks similar to hoisin sauce and tián miàn jiàng 甜麵醬 (sweet bean paste), but it is saltier, and less sweet. The principle ingredient is fermented yellow soybeans, whereas sweet bean paste is really sweet wheat paste that contains some fermented soybean. (I find it helpful to remember that the “miàn” or “麵” in “tián miàn jiàng” refers to wheat flour.)

Ground bean sauce is a general purpose condiment, used in marinades, stir-fries, and braises. Mixed with hoisin sauce, light and dark soy sauces, Shaoxing wine, sugar, and other optional ingredients, ground bean sauce makes a marinade for roast pork butt or barbecued pork ribs. Ground bean sauce is also commonly used with sweet bean paste and other ingredients to make fried sauce noodles (Zhá jiàng miàn), a popular dish in northern China.
