Chinese Sweet Potato Balls

The sweet potato balls are crispy on the surface and soft on the inside. If you want the sweet potato balls to have more sweet potato flavor, you can reduce the amount of flour by 10g (about 3 3/4 tsps). If you think the sweet potato is not sweet enough, you can add 10-20g (2 1/2 to 5 tsps) of white sugar. Of course, if you think the sweetness is suitable, you reduce or eliminate the sugar. This recipe is cooked in two steps. First, the sweet potato slices are steamed. This allows you to mash them into a smooth paste, to add the flour and make the dough. Then the dough balls are fried in hot oil.

  • Prepare the ingredients.
    Sweet potatoes and flour
  • Peel the sweet potatoes and cut into small pieces.
    400 g sweet potato

  • Add enough water to the steamer, then place the sweet potatoes on the top level of the steamer. Cover with the lid. Bring the water to a boil, then use medium heat and continue steaming for 5 minutes after the water boils. Then turn off the heat.

  • Take out the sweet potatoes and mash them into sweet potato puree, then add sugar and flour.

  • Then make sweet potato balls, each weighing about 15g (about 1 rounded tablespoon). Roll into balls.

  • Fill the wok about halfway with oil and heat to 150°C (302℉), then add the sweet potato balls, and fry over medium-low heat. Turn them several times. Fry for 4-5 minutes, then remove the sweet potato balls from the oil and drain.

Notes

  • When putting the sweet potato balls into the hot oil, please do not put them directly in, let’s put them slowly along the edge of the pan. This will prevent them from being splashed by the hot oil.
  • Please pay attention to turning the sweet potato balls while they are being fried so that they are evenly heated, so as to ensure uniform maturity and color.
