Sichuan cuisine is the most popular in China, and is known for spicy dishes like Kung Pao Chicken, and Hot Pot. The most unique and important spice in Sichuan cuisine is the Sichuan peppercorn (花椒; huājiāo; ‘flower pepper’), which has an intense fragrant, citrus flavor and produces a numbing sensation in the mouth. Other commonly used spices in Sichuan cuisine are garlic, Tien Tsin chili peppers, ginger and star anise.
