Chinese Noodles

The Chinese invented noodles, and they are a diet staple in many Chinese cuisines. Chinese noodles are made from many different ingredients, including: wheat, rice, mung bean starch, millet, oats, and sweet potatoes.

According to Wikipedia, there are over 1200 types of noodles in China today.

We use a few of the more common types in our recipes.

  • Wheat (egg) noodles, including alkali noodles and ramen-type noodles (ramen is Japanese for lāmiàn 拉面 noodles)
  • Rice noodles
  • Starch noodles (also called cellophane or vermicelli) made from mung bean starch

Fresh Chinese noodles are typically only available in Asian markets and bakeries, but all of our recipes can be made with dry noodles readily available online.
