The recipe we are going to make today is a vegetarian dish called Stir-fried King Oyster Mushrooms (pleurotus eryngii). King oyster mushrooms have a buttery, umami flavor, and a texture similar to eggplant. In China, we fry them, red-braise them with soy sauce, and use them in soup to make a variety of delicious dishes. Today I chose to cook king oyster mushrooms by stir-frying. This is a fairly simple recipe, but it is a two-stage cooking process: the mushroom slices are lightly browned in hot oil before being added to the stir-fry. Pleurotus eryngii is rich in protein and is used in Traditional Chinese Medicine. King oyster mushrooms have anti-oxidant, anti-hyperlipidemic, anti-tumor, and anti-inflammatory properties, and benefit the immune system.
Slice the king oyster mushrooms, green and red pepper as shown. The king oyster mushroom slices should be 5mm (just under ¼ inch) thick.
Chop the green onion into segments about one inch in length. Peel, slice and chop the ginger slices into small chunks as shown.
Cooking:
Fill the wok about halfway with oil, and heat it to 150° C (300° F). Add the mushroom slices to the hot oil. When the mushrooms turn yellow, remove them, then drain the oil from the wok into a heat-proof container.

Heat a clean wok, then add 15 ml (1 tbsp) clean cooking oil, the ginger, and the red bean paste. Stir-fry until fragrant.

Add the king oyster mushrooms and stir-fry well, tossing to coat evenly. Season with sugar, light soy sauce and salt (to taste). Next, add the green peppers, red peppers, and green onions.
2 king oyster mushrooms, 1 fresh green chili pepper, 1 fresh red chili pepper, 2 green onions, 3 ml sugar, white (granulated), 7 ml light soy sauce , salt
Stir-fry for 15 seconds to combine and coat, then finish and serve.
Notes
Be careful with the hot oil.
Cut the oyster mushrooms into 5mm slices.
Test flavor for saltiness before adding salt. The doubanjiang and the soy sauce have a salty flavor.
