In China, many people like to eat chicken wings: no one can resist the temptation of chicken wings, whether they are old or young. There are many ways to make chicken wings, deep-fried, stir-fried, stewed, grilled, baked, and so on. The main nutrient of chicken wings is collagen. Recently I shared how to cook cola chicken wings. These are very tasty and sweet, and are very popular in China. So if we don’t want to eat sweet chicken wings, if we want to change the taste, how should we cook chicken wings? In China, not every family’s kitchen has an oven, but I can be sure that every Chinese family’s kitchen will have a wok. Today we will use a wok to cook delicious and simple spicy garlic chicken wings. The ingredients we use are all simple. 

Although you see that I used some xiao mi la peppers, the main taste of this dish is not spicy. After you cook or taste it yourself, you will find that the main taste of these chicken wings is garlic. In northern China, most people like garlic. They even eat raw garlic cloves. As a southerner, I have tried to eat raw garlic cloves, but my attempt failed because the taste of garlic cloves is very different from that of chili peppers. The strong flavor of raw garlic filled my mouth and I had to spit it out of my mouth. Therefore, I decided that when I cook a recipe, the garlic is also cooked, except, of course, for cold dishes 

Ingredients for Jing's Spicy Garlic Chicken Wings

Ingredients:

  • 1 pound (500 g) chicken wings (11 pcs) 
  • 8 garlic cloves 
  • 2 green peppers 
  • 4 Xiao mi la chili peppers 
  • 1 teaspoon (5 ml) Light soy sauce  
  • 1 teaspoon (5 ml) Oyster sauce 
  • ½ teaspoon (3 ml) ground black pepper 
  • 1 teaspoon (5 ml) Salt 
  • ½ teaspoon (3 ml) white sugar 
  • 4 teaspoons (20 ml) cooking oil 

Preparation:

  1. Chop 5 of the garlic cloves and set aside.

  2. Cut all the chicken wings in the middle for better marinating. 
  3. Add the chopped garlic from step 1 to the chicken wings. Then add oyster sauce, light soy sauce, black pepper, white sugar, and salt. Stir well and marinate for 20 minutes.

  4. Chop the remaining 3 garlic cloves and the chili peppers.

Cooking spicy garlic chicken wings:

  1. Heat 2 teaspoons (10 ml) of oil in a wok, remove the minced garlic on the surface of the marinated chicken wings, and fry the chicken wings in the wok. Fry until golden brown, then remove the wings from the wok. 
    Stir-fry the chicken wings brown the chicken wings and set aside
  2. Heat the remaining oil (10 ml) in the wok. Next, add the minced garlic and saute. 
    Sautee the remaining chopped garlic
  3. Add the chicken wings and chili peppers and stir fry for 2 minutes. 
  4. Serve.

Notes:

  • Pay attention to the wings when turning, and avoid sticking the skin of the chicken wings to the pan. You can add more oil when frying the chicken wings to keep them from sticking to the pan. 
  • If you like more vivid colors, you can add 3ml of soy sauce or some chili oil.

Preparation

    2 green peppers, 4 xiao mi la (millet) chili peppers, 1 pound chicken wings
    Add the browned chicken and the green peppers into the wok to finish
  • Serve.
