Today is still the day of cold dishes for warm weather, so we will make a delicious, spicy cold tofu dish. When it comes to tofu, I guess you will like Mapo tofu! There are two versions of Mapo Tofu on our website, home version and professional version. You can check them out if you are interested. Today’s cold tofu recipe is simple and full of flavor. There is a seasoning in this dish that gives this rich flavor: chili oil. This is a seasoning used in most cold dishes, it is not very spicy, but full of aroma.

The spice in this spicy cold tofu comes from fresh xiao mi la peppers. If you cannot find fresh, you can soak dried peppers for 15 to 20 minutes in water before adding them.

Preparation

  • Wash the scallion and peppers. Peel the garlic cloves.

  • Cut the tofu into 1.5 cm cubes.

Cooking

  • Bring enough water to cover the tofu to a boil. Blanch the cubed tofu in the boiling water for 7 to 10 seconds. Drain the tofu in a colander and transfer to a plate.

  • To prepare the sauce, mix the garlic and xiao mi la peppers with the seasonings. Stir to combine.
    3 cloves fresh garlic, 2 xiao mi la (millet) chili peppers, 1 tsp white sugar, 1 tsp light soy sauce, 1/2 tsp vinegar, 2 tsp oyster sauce, 1 tbsp chili oil, 1/2 tsp toasted sesame oil

  • Drain the tofu a second time to ensure there is no water on the plate. Then pour the sauce over the tofu, sprinkle with the chopped scallion, and serve.

Notes

  • Choose soft and tender tofu and be careful not to break the tofu.
  • The taste of this dish is salty and spicy, and you can smell the aroma of the chili oil. If you don’t like too spicy, then you can choose milder peppers, such as er jing tiao or chao jian tiao (“facing heaven”) peppers.
  • If you cannot get fresh chilies, you can soak dried peppers in water for 15 to 20 minutes before chopping them.
