Fried Chicken Wings
Equipment
- 1 wok
- 3 mixing bowls
Ingredients
- 6 chicken wings
- Cooking oil for deep-frying peanut, corn, soybean, or other high-smoke point oil
Marinade
- 10 g fresh ginger
- 2 green onions
- 3 ml salt
- 2 ml ground white pepper
- 5 ml Shaoxing cooking wine or dry sherry
- 3 ml light soy sauce
Coating
- 60 g corn starch
- 1 egg beaten
- 100 g yellow breadcrumbs substitute Panko breadcrumbs
Instructions
- Prepare the ingredients you need to use. Rinse the chicken wings thoroughly. Rinse the green onions and ginger thoroughly. Slice off the roots of the green onions, and slice the ginger into coin-sized rounds. Measure the cornstarch and breadcrumbs into bowls. Break the egg into a bowl and beat thoroughly.

- After marinating, coat the chicken wings with cornstarch, dip the coated wings in the egg, and then coat each wing with breadcrumbs.60 g corn starch, 1 egg, 100 g yellow breadcrumbs
- Fill the wok about half way with oil, heat to 150° C (302° F) and add the prepared chicken wings. Once the breadcrumbs are set and form a crust, reduce heat to medium or medium-low heat to cook the wings through for about 4-5 minutes.Cooking oil for deep-frying
