Harbin Red Sausage and Green Pepper Stir-fry

Harbin Red Sausage and Green Pepper is a simple dish, stir-fried at medium temperature. Just like its name, the main ingredients are green pepper and sausage, with garlic and soy sauce to increase the flavor. The sausage I used in the recipe is the red sausage from Harbin, China. There are many varieties of sausages. Harbin’s red sausage is also famous in China. This Harbin red sausage and green pepper stir-fry is low in carbohydrates, and ready to eat in minutes.

Harbin City is the capital of Heilongjiang province in northeastern China. It is world famous for one of the largest ice and snow sculpture theme parks in the world, and home to the Harbin International Ice and Snow Sculpture Festival from late December to February. Heilongjiang shares a border with Russia, and in the early 1900s, Poles, Lithuanians, and Russians fled to the province to escape war. They brought their sausage making skills with them.

Harbin red sausage (哈尔滨红肠) became one of the local specialties, now eaten all over southeast Asia. Red sausage uses high-quality pork as the raw meat filling. The casing is made of pig intestines, cow intestines, or sheep intestines. Starch and various seasonings are added, and after marinating, baking, cooking, and various processes, the red sausage is ready. We can buy the finished red sausage in the vegetable market or supermarket, and then take it home. We can eat it directly after slicing it or add our favorite side dishes for a simple cooking. The red sausage itself is a bit salty, so be careful not to add too much salt when seasoning.

Ingredients
 
 

  • 3 green peppers (Anaheim or Bell)
  • 135 g Harbin red sausage (1 sausage)
  • 2 cloves garlic (sliced)
  • 5 ml soy sauce
  • 1 ml salt
  • 15 ml oil

Instructions
 

  • Prepare the ingredients.

  • Slice the garlic and sausage and dice the green pepper.
    Chop the green pepper, slice the garlic and sausage
  • Add 15ml (1 tbsp) of oil to the pan, add garlic slices, stir-fry until fragrant, then add the sausage.
    135 g Harbin red sausage, 15 ml oil, 2 cloves garlic
    Stir fry the sausage with the garlic
  • Stir-fry over medium heat for 20 seconds, add the green pepper, soy sauce, and salt to taste. Continue to stir-fry for 30 seconds.
    3 green peppers, 5 ml soy sauce, 1 ml salt
    Stir-fry the sausage and chopped green pepper
  • Transfer to a plate and serve.
