My personal favorites are the pork egg rolls, which are easier to make than they appear, and the scrambled eggs with spinach. All are delicious. When you are pressed for time, these egg recipes offer a fast and healthy meal.

Each recipe listed here is less than 20 grams carbohydrate per serving. Most dishes can serve 2 to 4 people. (The egg pancake recipe easily yields enough to fill the bellies of four people.)
