Fried rice is a tasty way to use leftover rice. In fact, the best results come from using cold, leftover rice from the previous night’s dinner. Beef is rich in protein and flavor, yielding a delicious fried rice. This dish is easy to cook at home. After a portion of ordinary rice is cooked again with some ingredients, you can get a new and delicious fried rice.

This recipe uses beef and leftover rice, and another important ingredient, eggs, which are indispensable in fried rice. Some people like to add snow peas or bean sprouts to fried rice, and these are good, healthy ingredients. For this recipe I used a small amount of shredded Napa cabbage and chopped chili peppers. In this recipe, I used a lot of rice, 500g, enough for 3 people. If you want to make a single serving, please reduce the quantities accordingly.

  • Prepare the ingredients.
    Ingredients for Beef Fried rice: day old cooked rice, napa cabbage, 2 eggs, green onions, chili peppers, beef
  • Mince the beef.

  • Shred the cabbage and chop the green onion.

  • Crack the eggs into a bowl and beat slightly.

  • Add 10ml (2 tsps) oil to the wok, add the beef, and brown until the beef releases its moisture and the liquid is evaporated, then add white pepper and cooking wine. Pour out and set aside

  • Add 15ml (1 tbsp) oil to the pan, add the egg liquid, and add the cabbage after the egg liquid solidifies.

  • Stir-fry. After the cabbage is soft, season it with 3ml (⅗ tsp) salt and 10ml (2 tsps) chopped chili pepper sauce. Stir-fry evenly.

  • Add the rice and 20ml (4 tsps) light soy sauce, then stir-fry until the color is even. Next, add beef and chopped green onions. Stir-fry evenly.

    After adding rice and soy sauce, add the beef and green onions.
  • Transfer to a bowl and serve.
