  • 300 g 猪里脊
  • 5 ml 盐
  • 3 ml 白胡椒粉
  • 25 g 玉米淀粉
  • 食用油

  • 1 炒锅
  • 1 锋利的菜刀
  • 1 搅拌碗

Method
 

  1. 把里脊切3-5mm厚的片，然后切三角形。
    300 g 猪里脊
    Slice the pork into 3-5 mm thick slices, along the grain
  2. 冲洗。完全沥干水分。
    Cut the pork tenderloin into triangular pieces
  3. 在猪肉中加入盐和白胡椒粉搅拌均匀，腌制10分钟。
    5 ml 盐, 3 ml 白胡椒粉
    Add cornstarch to the pork and stir to coat evenly
  4. 在腌制完成的猪肉中加入淀粉。搅拌均匀。
    25 g 玉米淀粉
    Coat the marinated pork evenly with cornstarch
  5. 在干燥的锅中加入锅的1/3的油。加热至130-150 C。然后使用中小火，把猪肉放入热油中，炸至金黄酥脆后捞出，沥干油。
    食用油
    Fry the coated pork in hot oil
  6. 完成。

Notes

  • 这是一个干燥的菜，所以我们需要尽量的沥干水分。 
  • 让每一片猪肉的两面都粘上淀粉。 
  • 猪肉在热油中进行油炸时，注意不要让它们粘在一起。
